Plant-based pupcakes are a fun way to get your dog to eat more fruits and veggies :)
Ingredients for 12 pupcakes:
* 1 1/2 cups all purpose flour
* 1/2 tsp cinnamon
* 1 tsp baking soda
* 1/2 tsp baking powder
* pinch of salt
* 2 Tbsp coconut oil melted
* 2 Tbsp applesauce
* 1 cup plant-based milk (I use oat milk)
* 1 tsp apple cider vinegar
* 1 cup pureed vegetables (pumpkin, sweet potato, carrots…)
* 1/2 cup maple syrup
For the icing:
* 4 oz vegan cream cheese
* 1/4 cup peanut butter
Preheat oven to 350°F.
Put all ingredients in a blender and mix. Pour dough in cupcake pan previously lined with baking paper cups. Bake for 15-20 minutes. Cool cupcakes on cooling rack.
Meanwhile, mix the vegan cream cheese and the peanut butter together.
Once the cupcakes are cool, put icing on top using a pastry bag with a decorative tip (if you don’t have one, you can spread it with a small spatula).
