We had an online cooking demo where we showed how to veganize many recipes, and demonstrated how to make some of your own staples.

Here is our favorite ways to substitute 1 egg in almost any recipe:
1 tablespoon of ground flaxseeds + 3 tablespoons water It makes a thick and gelatinous egg replacement perfect for binding.
¼ cup unsweetened applesauce It adds moisture and is very versatile. Add ½ teaspoon of baking powder if you want a lighter texture.
¼ cup soy milk + 1 tsp apple cider vinegar It makes vegan buttermilk and works great in cupcakes.
¼ cup blended silken tofu Perfect for recipes where eggs are the main ingredients like scrambles, quiches...
2 fl oz Just Egg Even better than tofu!
For an egg wash, mix 2 Tbsp plant-based milk with 1 tsp agave syrup and brush on top of breads and pastries before baking.
A quick breakfast for two.
16 oz firm tofu, optionally pressed
2 Tbsp nutritional yeast
1/4 tsp turmeric
1/4 tsp garlic powder
1/2 tsp salt (use black salt aka kala namak for a eggy taste)
2 Tbsp plant-based milk
Heat olive oil in pan over medium heat, and mash tofu in it.
If tofu not pressed, cook for a few minutes until most of water has evaporated.
Stir in nutritional yeast, turmeric, garlic powder, and salt. Cook for 5 minutes.
Add plant-based milk and mix.
Optionally, add sautéed vegetables (examples: bell peppers, mushrooms, spinach)
